How do I use it?
? Can be stored 12 months in a cool, dry place, far from the sun.

? To cook pasta you will need: your chosen pack of pasta, a large cooking pot, coarse salt, sauce or seasoning of your choice and all you need to cook it, and 20-30 minutes patience.
? Calculate a weight of 80-100g of pasta per person.
? Fill a pot of cold water 2/3 full. It is important to use a large pot, otherwise pasta may stick during cooking. For example, if you want to cook half a kilo of pasta, use a pot with a capacity of at least 4 liters.
? Put the pot on the stove and cover it with a lid. Light the fire over a high flame to make the water boil.
? Meanwhile, start cooking the sauce or seasoning. Hemp pasta is excellent with mixed vegetable sauces cooked in olive oil, tomato sauce or pesto, or try other seasonings according to your creative flair. Simple products help enhancing its typical taste, like a mix of sautéed vegetables, olives, capers, cheese, or fish.
? When the water starts boiling brightly, add a tablespoon of coarse salt, then pour pasta into the water. If you want to prepare spaghetti or another variety of long pasta that does not fit completely into the pot, wait a few seconds, then gently push it under the surface of the water using a fork or kitchen tongs.
? Occasionally stir the pasta every 2-3 minutes to prevent it from sticking. The water must continue to boil for the entire cooking time. If the water boils too much with the risk of leaking out of the pot, reduce the heat slightly.
? Calculate the time as written on the package, but taste the pasta to know if it's ready. When the kitchen timer rings, take a piece of pasta out of the water and wait for it to cool for a few seconds, then taste it to see if it has reached the consistency you want. Most people in Italy like to eat "pasta al dente", that is when it is tender on the outside but still slightly hard on the inside. If the pasta is still too hard, let it cook for another minute and then taste it again.
? Put a colander in the sink and put on your oven gloves to protect you from hot splashes. Pour the pasta into the colander and then shake it gently.
? Put the pasta back into the pot and add the sauce. Let it cook for another minute, stirring constantly.

Is it safe for health?

? Low in carbohydrates, thus contains few calories, and rich in protein, minerals, vitamin B and folic acid, it has a high nutritional value, also rich in fibers, an aid to absorb less fat.
? Selected in 1915, the "Senatore Cappelli" variety of wheat, cultivated in Southern Italy, contains higher percentages of lipids, amino acids, vitamins and minerals than other common varieties of wheat, as well as characteristics of high digestibility. It is a durum wheat and does not melt during cooking.
? Maize flour is extremely satiating, it provides 362 Kcal per 100 grams, but it is poor in proteins and in B vitamins, which should be supplemented with other food. It is rich in alanine and leucine amino acids and does not contain gluten. Leucine is is essential in humans, meaning the body cannot synthesise it: it must be obtained from the diet, contained in maize but also meat, dairy and legumes.
? In the vegan diet, the consumption of hemp flour and derivatives should be frequent and systematic. They are very useful in the diet against celiac disease and to increase the protein intake. The digestibility of hemp flour proteins is comparable or higher to that of some cereals, legumes and dried fruits. It also contains many molecules useful to the body, such as essential fatty acids, fibers, vitamins and amino acids. It provides 21% fewer calories than type 00 wheat flour, and in hemp flour 49.5% of the energy comes from protein, while in type 00 wheat flour 89% of the calories are provided by complex carbohydrates. It does not include gluten, so it is perfectly tolerated by coeliacs. The main peptide component, called edestine, contributes predominantly (30%) to the total protein intake, providing all the essential amino acids, significantly arginine. The essential amino acids in hemp meal comply with the inputs recommended by the Food and Agriculture Organization (FAO/WHO) for children between 2 and 5 years of age. It also contains a very large portion of triglycerides, mainly composed of essential polyunsaturated fatty acids, which represent 24% of total calories and just over 8% of total weight, with the optimal ratio of 2:1 or 3:1 between omega 6 and omega 3. Thanks to this characteristic, hemp flour is considered a preventive food against many cardiovascular discomforts and metabolic etiopathogenesis. In contrast to type 00 wheat flour, hemp flour provides only 3.8% of the calories from carbohydrates, which are simple sugars. The fibers are very abundant and make it an ideal food for fighting or preventing constipation. The mineral salts most present are: potassium, magnesium, iron, zinc and vitamin E. The hemp used hereby is organic, grown without the use of pesticides and chemical herbicides, really making a difference to health and, of course, the environment. Hemp is antimicrobial and anti-allergic, unassailable by mites, molds, fungi and moths; it is hypoallergenic and also does not conduct electricity, so it is safe to store for a long time.
